A Sweet Frosty Dream Come True: My Niagara Ice wine Festival Adventure ✨
There are moments in life that feel like pure magic, the kind you tuck away in your heart and revisit when you need a little sparkle. Last weekend, I checked off a bucket list item I did not even know I needed until I lived it, the Niagara Ice wine Festival. And let me tell you, it was nothing short of remarkable.
Just picture this, crisp winter air, vineyards dusted with snow like powdered sugar, and the warm glow of tasting rooms beckoning you inside. We embarked on our journey with the Discovery Pass, a brilliant little ticket that unlocks six unforgettable food-and-wine pairings at any six wineries of your choice. No rushing, no stress, just pure, intentional sipping and savoring across the festival days.
Our Six-Stop Sweet Journey 🍷
1. Château des Charmes
We began our adventure with pure elegance at Château des Charmes. Their Vidal en Flamme pairing featured a silky “burnt” Basque cheesecake crowned with sea salt and smoked Vidal caramel. Then came the 2024 Vidal Icewine, honeyed stone fruit notes wrapping around that caramel like a velvet blanket. I may have closed my eyes for a full ten seconds just to soak it in. What a way to start, winter wonderland meets dessert heaven.

2. Jackson-Triggs Niagara Estate
Jackson-Triggs greeted us with Sweet, Spicy, and a Little Bit Icy, a crispy wonton cup filled with gochujang-glazed chicken that packed a gentle punch. One sip of their 2023 Vidal Icewine, and tropical sweetness met that subtle heat in the most delightful collision. Our server grinned as our whole group went silent mid-bite, that kind of delicious.

3. Lakeview Wine Co.
Pure comfort called at Lakeview with their Smoked Salmon Serenade. Chef Drew’s house made dill cream cheese and silky smoked salmon nestled on a mini bagel, elevated by the 2019 Gewürztraminer Ice wine. That whisper of spice in the wine lifted the smokiness like a gentle breeze. I watched an older couple at the next table share bite after bite, then just sit holding hands, smiling. This is what Ice wine does to people.

4. Pillitteri Estates Winery
History in a glass! We tasted the world’s first Corvina Icewine, deep, bold, and unlike anything I had ever experienced. Paired with warm perogies oozing cheddar and bacon (plus jalapeños for kick!), it was a savory-sweet symphony that surprised even my husband who “doesn’t do sweet wines.” Sometimes you just have to trust the pioneers.

5. Peller Estates Winery
The highlight our kids still won’t stop talking about, Ice wine Marshmallows by the legendary Chef Jason Parsons. Picture this, little hands gathered around a mini “campfire” station, carefully toasting marshmallows glazed with Ice wine until golden and gooey. We toasted them and got ourselves messy with runny marshmallows, and for one beautiful moment, we were all kids again, laughing, sticky-fingered, and utterly present. Paired with the Oak Aged Vidal Ice wine, it was nostalgia and luxury holding hands.

6. 180 Estate Winery
We saved our grand finale for 180 Estate Winery, and what a finish! Sweet Meets Spicy Antojito Bliss, a warm tortilla stuffed with spicy cream cheese, shredded chicken, and sautéed peppers, topped with crunchy corn chips and hot sauce. Then came the moment of truth, a sip of their 2019 Late Harvest Vidal. Bright citrus and honeyed apricot notes danced right over the heat, creating this perfect yin-yang moment on the palate.

We did not stop there. By day’s end, we had brought home 12 bottles as little bottles of joy we could uncork again on ordinary evenings, bringing that frost-kissed magic right back to our kitchen table. Because why let a perfect day end when you can pour it into a glass and relive it anytime? Mission more than accomplished.
A Note for Non-Drinkers & Families ❤️
You do not need to love wine to fall in love with this festival. Our kids enjoyed the Driver Pass, which gifted them creative, beautifully crafted mocktails at every stop, from Collective Arts’ Perpetual Paloma to Peller’s Sparkling Apple Cider. They felt just as celebrated, just as included. Watching their faces light up with each new “special drink” reminded me, joy is not about the alcohol, it is about the experience, the togetherness, the yes moments.
Life moves fast. We fill our calendars with obligations and forget to pencil in wonder. This festival is wonder in a glass. It is slow travel with intention. It is a reminder that magic happens when frost meets fruit, when heat meets honey, when we choose delight.
So here is my gentle nudge to you. Make the Niagara Icewine Festival a future-you gift. Bundle up, grab someone you love, and let the region wrap you in warmth, flavor, and frost-kissed joy. Your bucket list will thank you.
